We weigh everything & let you know the final total. We request pre-payment through Venmo but can also take cash, credit cards, & checks. Great alternative to London Broil- can be a roast or steak. From the sirloin area, a very versitile cut. Can be marinated- never cook past medium. It's a lean cut so you'll want to use a thermometer.

Back Ribs (prime rib bones with trim)

From the prime rib- will be tender & flavorful.  Similar to pork baby back ribs.  Cooking with moist heat  tends to make the meat fall off the bone easier - to impart greater  flavor, use a dry & smokey heat to bring out the great prime rib flavor. 

Chuck Roast - Sold out

Chuck: 3-4# boneless roast, ideal for pot roast or pulled beef. Very tender & flavorful. Well-marbled. Best when braised with some liquid low & slow over several hours. My favorite is red wine, beef base, chopped onion in the crock-pot. Sear first & deglaze pan for added flavor. 

*A great substitute for chuck roast is Osso Buco!*

A leaner, very flavorful roast.. and surprisingly tender! Also can be cut thin to make jerky.  The round is the cut used to make our Minute/Sandwich Steaks

*Price may fluctuate based on feed costs. We have seen a 30%+ increase in feed & materials cost this year which makes it much more expensive to raise these birds in the ethical manner we raise them. Unlike chicken purchased in the retail setting, NONE of our chickens are injected with salt water to brine or add 25-40% more weight & additional sodium. Birds are Cornish Cross genetics.

Unroll large piece of skin onto oven tray with rim, ideally with non-stick liner, season lightly & bake til crispy. Perfect for munching or as an all-natural crunchy topping or add to sandwiches .   SAVE the fat drippings, strain, & store in refrigerator to cook  or roast veggies. This is THE most flavorful fat for cooking veggies & more.

Seeing & tasting is believing! These eggs are as gorgeous as they are delicious from our heritage breeds of hens.  The range from the deepest brown, tan, olive green, blue, & white eggs.  We have a relatively small flock of only 50-75 hens time with access to acres of shaded & sunny, grassy pasture.  We want to be sure they aren't crowded, clean accommodations, & have the best quality of life possible. 


Raw Honey -

Unfiltered, Raw Honey. Will retain all beneficial live enzymes, propolis, & antibacterial properties. Do not heat beyond 115* & never microwave honey. Will last forever if properly stored. Hives are in Steuben County NY & Tioga County PA. Varieties presently include Bamboo (Japanese Knotweed), Goldenrod (includes Ragweed pollen which triggers 75% of all pollen allergies), Goldenrod/Star Thistle blend, Basswood, & Wildflower (several seasons of pollen).
