Spatchcock is a butterflied bird; back is cut out & chicken lays flat. Wings & thighs nestle above breasts resulting in even cooking. All skin gets crispy instead of just the breast skin (when roasting whole bird)

Make your own anti-inflammatory bone broth with the necks, backs, carcass, & feet (FULL of beneficial gelatin). Roast 30 minutes in 350* oven, put in stock pot, slow cooker, or roaster oven & cover with water. Add a splash of apple cider vinegar (with the "mother") to draw out more mineral. Simmer on low for several hours (or up to 2 days for deeper color). Skim during cooking & strain several times after cooking to remove impurities. Also can do this with our pastured beef or pork bones.
Unroll large piece of skin onto oven tray with rim, ideally with non-stick liner, season lightly & bake til crispy. Perfect for munching or as an all-natural crunchy topping or add to sandwiches . Be sure to save the fat drippings, strain, & store in refrigerator to cook or roast veggies.
