BULK orders:

While it's an option to purchase sides of beef or pork, we know you get a lot of cuts you don't eat. It can also be confusing to deal with the cut specs, hanging weight vs. final weight, picking up at butcher, etc. We make it easy for you: Pick out the cuts & amounts you want (OK to mix & match beef, pork, chicken), & once you hit certain weights, we apply a flat discount to the entire order. So, you end up paying the same amount as you would if you got a half beef, for example.


How to Order:

Because pieces of meat vary in size, we charge by the exact weights you purchase, not an approx amount like many farms who sell online. Thus, we do manual charges for each order. Please call/text/email your requested pieces. We weigh everything & let you know the final total. We request pre-payment through Venmo but can also take cash, credit cards, & checks. We'll coordinate delivery or meet-up options for your order. 607-237-1567

Fat & juicy dogs with great snap & texture.  Made with 80% pork & 20% Beef. Very flavorful with a very faint hint of horseradish. Packages of 6 dogs. Contains preservatives. For smaller mouths, these dogs can be cooked then cut lengthwise to go twice as far! 

Chuck Roast

3.5-6# (please specify size preference) bone-in roast, ideal for pot roast or pulled beef. Very tender & flavorful due to its marbling that melts when braised with some liquid low & slow over several hours. My favorite is to sear first & deglaze pan with red wine, organic beef soup base, chopped onion in the crock-pot on low.  *A great substitute for chuck roast is Osso Buco!*

From the prime rib- will be tender & flavorful.  Similar to pork baby back ribs.  Cooking with moist heat  tends to make the meat fall off the bone easier - to impart greater  flavor, use a dry & smokey heat to bring out the great prime rib flavor.

Fat

Render & strain to create THE MOST amazing tasting roasted potatoes or veggies.  Natural, Non-GMO, Pastured animal fat is healthier than processed fats, has a higher heat point, & is THE most flavorful fat for cooking. I always have a jar in the freezer for cooking. Also called 'schmaltz.'  Please note: schmaltz keeps in fridge 3-4 days; please store in freezer & thaw small portions as needed.

The range from the deepest brown, tan, olive green, blue, & white eggs.  We have a relatively small flock with access to acres of shaded & sunny, grassy pasture.  We want to be sure they aren't crowded, clean accommodations, & have the best quality of life possible.

Our sourdough loaves are made with Organic Italian Flour, Water, Salt, & live sourdough culture.

Making Sourdough takes patience & time; many factors affect the bread's rise & appearance (temperature, humidity, activity of starter- it's a true labor of love). 

After room temperature & cold proofing to develop cultures & flavor, it's baked in 9x5" pan dusted with rice flour.

We've chosen to use Italian flour free from glyphosates & pesticides & encourage you to taste & feel the difference.

No expiration if properly stored. Hives are in Steuben County NY & Tioga County PA. Varieties presently include Spring/Summer Wildflower, Golden-Thistle (Summer Star Thistle & Fall Goldenrod) ultra raw or liquified
