From the chuck eye roast, this steak is a good, lower cost alternative to the ribeye although slightly less flavorful & tender than the ribeye. Marinate before grilling. Best when served rare. VERY limited supply due to its being a rare cut. A MUST try!
Great smoked low & slow or slow roasted in crockpot with some liquid. 2.5-5# roasts
FULL of flavor, best cooked low heat to medium rare, no more than medium. A leaner roast, the sirloin tip cooks faster than other roasts. May also be marinated a few hours prior to cooking.

Spatchcock is a butterflied bird; back is cut out & chicken lays flat. Wings & thighs nestle above breasts resulting in even cooking. All skin gets crispy instead of just the breast skin (when roasting whole bird). Great for the grill (indirect heat) or roasting. Half birds great for smaller households/meals.

Make your own anti-inflammatory bone broth with the necks, backs, carcass, & feet (FULL of beneficial gelatin). Roast 30 min @ 350*, put in stock pot or slow cooker; cover with water. Add a splash of apple cider vinegar to draw out more minerals. Simmer on low 12-48 hours for deeper color. Skim during cooking & strain several times after cooking to remove impurities.
