Because pieces of meat vary in size, we charge by the exact weights you purchase, not an approx amount. Thus, we do manual charges for each order. Please call/text/email your requested pieces. We weigh everything & let you know the final total. We request pre-payment through Venmo but can also take cash, credit cards, & checks. We'll coordinate delivery or meet-up options for your order. 607-237-1567

1 steak per pkg.; Bone-In (same cut as Delmonico but with the bone)
By custom order prior to butcher date. Typically available in the fall.
Prized steak: includes both Tenderloin Filet & NY Strip. The main difference between the Porterhouse & T-Bone is the size of the filet.
Are you a strip or a filet person? Can't decide? Get BOTH! Similar to a Porterhouse but with a smaller filet portion.
Approx 0.5-1# steaks. Beautiful, tender, very flavorful, well-marbled.
Marbled cut from the shoulder; very flavorful and tender when cooked medium rare; simlar to ribeye. Grill or cast iron.
Cut up sirloin, ready to marinate & grill with veggies or slow cook stew meat
Very flavorful & tender when cooked to the medium rare temp. 1-2# steaks. **Flat Bone Sirloin is $2/# less due to the size of the bone.
Great alternative to London Broil- can be a roast or steak. From the sirloin area, a very versitile cut. Can be marinated- never cook past medium. It's a lean cut so you'll want to use a thermometer.
From the chuck eye roast, this steak is a good, lower cost alternative to the ribeye although not quite as tender as rib steak/Delmonico. Best when served very pink. VERY limited supply due to its being a rare cut. A MUST try! These are small steaks, about 0.25# each.
Best when marinated to tenderize, sear, & cut against the grain.
My all-time favorites! Tender & very flavorful! Typically used for fajitas or stir-fry, best marinated, cooked rare, & sliced against the grain.
From the Round Roast. Sliced thin. Great for warm 'Philly Cheese' Sammies or marinate to make your own beef jerky.

Cut up round roast; deserving of mom's beloved weekend beef stew recipe.
From the shoulder, a nice alternative to chuck roast. Slightly leaner but just as tender
6 oz. square patties. Four per pack.
Thin cut from the chuck roast area. Don't discount this cut because it's inexpensive. Amazingly great flavor; lots of marbling, most of the steak is quite tender. One of our go-to's. A larger steak so can easily feed 3 or more people.
Chuck: 3-5# bone-in roast (Arm roasts are ~6#), ideal for pot roast or pulled beef. Very tender & flavorful. Best when braised with some liquid low & slow over several hours. My favorite is red wine, beef base, chopped onion in the crock-pot.
From the prime rib- will be tender & flavorful. Similar to pork baby back ribs. Cooking with moist heat tends to make the meat fall off the bone easier - to impart greater flavor, use a dry & smokey heat to bring out the great prime rib flavor.
A leaner, very flavorful roast. Also can be cut thin to make jerky. The round is the cut used to make our Minute/Sandwich Steaks
Whole or cut into pieces
Approx 2-3# roasts or steak. Cut at the bias. Great to make Mississippi Pot Roast or marinate & grill rare!

*Price may fluctuate based on feed costs. We have seen a 25%+ increase in feed & materials cost this year which makes it much more expensive to raise these birds in the ethical manner we raise them. Unlike chicken purchased in the retail setting, NONE of our chickens are injected with salt water to brine or add 25-40% more weight & additional sodium. Birds are Cornish Cross genetics

Add a splash of apple cider vinegar to draw out more minerals. Simmer on low 12-48 hours for deeper color. Skim during cooking & strain several times after cooking to remove impurities. Also can do this with our pastured beef or pork bones.
Unroll large piece of skin onto oven tray with rim, ideally with non-stick liner, season lightly & bake til crispy. Perfect for munching or as an all-natural crunchy topping or add to sandwiches . SAVE the fat drippings, strain, & store in refrigerator to cook or roast veggies. This is THE most flavorful fat for cooking veggies & more.
