Because pieces of meat vary in size, we charge by the exact weights you purchase, not an approx amount. Thus, we do manual charges for each order. Please call/text/email your requested pieces. We weigh everything & let you know the final total. We request pre-payment through Venmo but can also take cash, credit cards, & checks. Occasionally we have packages of items (usually oddly shaped items or large roasts) that don't hold a tight seal if they've been bumped a few times. Those are often the ones our family eats & they are still perfectly fine. Over time, however, they can age a piece faster. Those items can be purchased at a heavy discount if you're going to use them in the next couple of months. We prefer they are consumed within a year of processing for best results.. Marbled cut from the shoulder; very flavorful & tender. One of those secret cuts that are hard to find. Grill or cast iron. Great as kabobs, too!
Great alternative to London Broil- can be a roast or steak. From the sirloin area, a very versitile cut. Can be marinated- never cook past medium. It's a lean cut so you'll want to use a thermometer.
From the chuck eye roast, this steak is a good, lower cost alternative to the ribeye although not quite as tender as rib steak/Delmonico. Best when served very pink. VERY limited supply due to its being a rare cut. A MUST try! These are small steaks, about 0.25# each.

From the prime rib- will be tender & flavorful. Similar to pork baby back ribs. Cooking with moist heat tends to make the meat fall off the bone easier - to impart greater flavor, use a dry & smokey heat to bring out the great prime rib flavor.
Thin cut from the chuck roast area. Don't discount this cut because it's inexpensive. Amazingly great flavor; lots of marbling, most of the steak is quite tender. One of our go-to's. A larger steak so can easily feed 3-4 people.
Chuck: 3-4# boneless roast, ideal for pot roast or pulled beef. Very tender & flavorful. Well-marbled. Best when braised with some liquid low & slow over several hours. My favorite is red wine, beef base, chopped onion in the crock-pot. Sear first & deglaze pan for added flavor.

Spatchcock is a butterflied bird; back is cut out & chicken lays flat. Wings & thighs nestle above breasts resulting in even cooking. All skin gets crispy instead of just the breast skin (when roasting whole bird). Great for the grill (indirect heat) or roasting. Half birds great for smaller households/meals.

Seeing & tasting is believing! These eggs are as gorgeous as they are delicious from our heritage breeds of hens. The range from the deepest brown, tan, olive green, blue, & white eggs. We have a relatively small flock of only 50-75 hens time with access to acres of shaded & sunny, grassy pasture. We want to be sure they aren't crowded, clean accommodations, & have the best quality of life possible.
