While it's an option to purchase sides of beef or pork, we know you get a lot of cuts you don't eat. It can also be confusing to deal with the cut specs, hanging weight vs. final weight, picking up at butcher, etc. We make it easy for you: Pick out the cuts & amounts you want (OK to mix & match beef, pork, chicken), & once you hit certain weights, we apply a flat discount to the entire order. So, you end up paying the same amount as you would if you got a half beef, for example.
Because pieces of meat vary in size, we charge by the exact weights you purchase, not an approx amount like many farms who sell online. Thus, we do manual charges for each order. Please call/text/email your requested pieces. We weigh everything & let you know the final total. We request pre-payment through Venmo but can also take cash, credit cards, & checks. Marbled cut from the shoulder; very flavorful & tender. One of those secret cuts that are hard to find. Grill or cast iron. Great as kabobs, too! Only get a few from a cow so grab them while they're available!

From the Round Roast. Sliced thin. Great for warm 'Philly Cheese' Sammies or marinate to make your own beef jerky.
Great alternative to London Broil- can be a roast or steak. From the sirloin area, a very versitile cut. Can be marinated- never cook past medium. It's a lean cut so you'll want to use a thermometer.
Tender & very flavorful! Typically used for fajitas or stir-fry, best marinated, cooked rare, & sliced against the grain.
Original smoked rope (all natural ingredients during processing). Slice & eat (fully cooked) or slice & warm in skillet to warm cheese with crackers.
Chuck: 3-4# boneless roast, ideal for pot roast or pulled beef. Very tender & flavorful. Well-marbled. Best when braised with some liquid low & slow over several hours. My favorite is red wine, beef base, chopped onion in the crock-pot. Sear first & deglaze pan for added flavor.
*A great substitute for chuck roast is Osso Buco!*

From the prime rib- will be tender & flavorful. Similar to pork baby back ribs. Cooking with moist heat tends to make the meat fall off the bone easier - to impart greater flavor, use a dry & smokey heat to bring out the great prime rib flavor.

Unlike chicken purchased in the retail setting, NONE of our chickens are injected with salt water to brine or add 25-40% more weight & additional sodium. Birds are Cornish Cross genetics and are raised on pasture with lush clover, grasses, bugs, fresh air, Non-GMO feed, & plenty of fresh water. They are moved at least twice daily to fresh grass.

Seeing & tasting is believing! These eggs are as gorgeous as they are delicious from our heritage breeds of hens. The range from the deepest brown, tan, olive green, blue, & white eggs. We have a relatively small flock of only 50-75 hens time with access to acres of shaded & sunny, grassy pasture. We want to be sure they aren't crowded, clean accommodations, & have the best quality of life possible.

These are our go-to recipes that we use to compliment our grass-fed, pastured meats.
Meatloaf is kept flavorful & moist with veggies & unique spices. Glaze is sweet with a hint of cumin & cayenne for smoke & heat. Add 2# of grass-fed beef & a few other pantry staples
