From the chuck eye roast, this steak is a good, lower cost alternative to the ribeye although slightly less flavorful & tender than the ribeye. Marinate before grilling. Best when served rare. VERY limited supply due to its being a rare cut. A MUST try!

Make your own anti-inflammatory bone broth with the necks, backs, carcass, & feet (FULL of beneficial gelatin). Roast 30 minutes in 350* oven, put in stock pot, slow cooker, or roaster oven & cover with water. Add a splash of apple cider vinegar (with the "mother") to draw out more mineral. Simmer on low for several hours (or up to 2 days for deeper color). Skim during cooking & strain several times after cooking to remove impurities.
